The only thing constant in Texas is the people’s love for Texas-style barbecue. There are more than a thousand BBQ establishments in the Houston area alone. Some of these are large chain restaurants competing with small neighborhood businesses. Drexler’s World famous Bar-B-Que is located in an area of Houston called the Third Ward-an economically disadvantaged neighborhood not far from downtown. It has been in the area since the late 1940s. It was a small establishment around 1500 sq feet but relocated to a 13,000 square foot located in 2003.

It features traditional fare and healthier menu items. Drexler’s continues to be a family business with strong underlying values. It is in the neighborhood and is of the neighborhood. The current head of the family, Mrs. Scott, influences the culture of the organization, and the values underpinning it. Her values of honest, hard work and treating people fairly with respect and her strong faith in God are obvious when you step in the restaurant.

The family gives back to the surrounding African-American community by sponsoring softball team and local Boy Scout troop.

Is some ways it would appear that Drexler’s is not very flexible or adaptable. The menu has remained the same for many years. The restaurant is always closed at 6:00pm and on Sundays and Mondays. Clyde “The Glide” Drexler is one of Mrs. Scott’s sons who was an exNBA player. Drafted in 1983 in the 1st round of the NBA draft by the Portland Trail Blazers. He finished his career as a ten-time All-Star and member of the Basketball Hall of Fame; the NBA named him one of basketball’s fifty greatest players as of 1996.

Drexler won an Olympic gold medal in 1992 and an NBA championship in 1995 with the Houston Rockets.  Since his retirement, he has been more involved in the daily operations of the restaurant.

Following the same values Mrs. Scott used to raise her family; she ran her BBQ restaurant successfully the same way.

• The quality of their food has been exceptional for having loyal clientele and new customers checking out what is so special about their food. Family members work the restaurant so their dedication to the success of the business is unquestionable.
• Efficiency is defined as the ratio of outputs to inputs. The ratios of benefit to cost or to time are in Drexler’s favor since their restaurant business is booming. Satisfaction refers to the extent to which the organization meets the needs of employees. Drexler’s employees are mostly comprised of family members who are committed to the success of the family business.
• Adaptiveness is the extent to which the organization can and does respond to internal and external changes. Drexler’s close the restaurant in 1994 for six months to rebuild the building into a newer and modern restaurant to change with times and their business doubled when they reopened.
• Development measures the ability of the organization to increase its capacity to deal with environmental demands.

Drexler’s has added space for future expansion into related and unrelated, businesses by other family members. Added some new items in the menu and now have live music for their customer’s entertainment.

Effectiveness criteria must reflect the interrelationships between the organization and its outside environment. Drexler’s have been giving back to the community by sponsoring a softball team and a local Boy Scout troop. Regular loyal customers are developed and a successful side business of catering social functions has also developed.
